In partnership with Joska Studio, AW Architects created The Fermentist: a microbrewery, restaurant and bar in Sydenham, Christchurch. Sustainability drove every decision — solar panels, rainwater harvesting, repurposed furniture and local suppliers shaped the design. Years of office fit-outs were peeled back to reveal brick walls, timber beams and skylights. A palette of laminated pine, recycled oak and bespoke steel and brass details bring warmth to the industrial shell. Winner of Best Awards Gold 2018 (Hospitality), the project is a model of adaptive reuse and community engagement.
